The ductwork commonly found in commercial kitchens is categorised as either moderate or heavy usage and should undergo cleaning every 3-6 months to comply with TR19 standards.
Moderate usage is categorised as 6-12 hours of cooking a day, whereas heavy usage is categorised as 12-16 hours a day of cooking.
Light use consists of 2-6 hours of cooking daily, which means your kitchen ductwork will only need a clean annually (every 12 months).

Does a kitchen duct fan need to be fire rated?
Ductwork within the kitchen that exhausts directly to the outside of the building does not need to be fire-rated.
Kitchen extract ductwork presents a particular hazard as combustible deposits, such as grease, are likely to accumulate on its internal surfaces. Therefore, the ductwork needs to resist fire from the inside (Type B) and must be rated for integrity and insulation for the same period as the compartment through which it passes from the hood to discharge.
A fire in an adjacent compartment, through which the kitchen extract ductwork passes, could ignite a fire within the ductwork. In the absence of fire dampers, this might compromise the safety of the kitchen’s occupants. For this reason, it should also be tested to fire outside (Type A). Fans compliant with EN 12101-3 must be used. Refer to BESA DW/172 for the appropriate fan type.
It is good practice to discharge the ductwork system 2 metres vertically from the highest point of the building to prevent fire from igniting the building structure or other services. Please check local authority regulations.
All fire-rated ductwork and penetration seals must be tested to BS
1366-1, including kitchen extract or ductwork with combustible linings test, and classified in accordance with BS 13501-3 by a recognised UKAS-accredited laboratory.
